National Higher Education Day; Healthier Meal Ideas For Students

Our friends over in America are celebrating National Education Day and we wanted a pizza the action (eyy… see what we did there). So, we thought what better time to dive into some super easy meals for students that are healthier AND delicious? Take a look at these SMASH-approved recipes…

That’s what I’m taco’ing about!

Mexican food is an absolute winner in the student kitchen! Whether you’re cooking for yourself and fancy leftovers for dayyysssss or have a guest coming over, you really can’t go wrong. We’re talking nachos, tacos, quesadillas, fajitas and our personal student favourite; enchiladas. These are awesome because you can prep them in advance and then just bake them when you’re ready to eat. Not to mention they’re delicious for lunch the next day. Here’s the recipe…

Ingredients 

  • 2 peppers and 2 onions (or any veg you need to use up)
  • 300g Quorn Pieces - SMASH 50p off on the app 
  • Olive oil
  • 8 x tortillas 
  • 2tsp paprika
  • 2 x garlic cloves crushed
  • 2stp mixed herbs 
  • Eatlean Grated Cheese - get a SMASHing 50p off on the app
  • Salad to serve

Method

  1. Heat the oil in a large skillet and add the 2 cloves of crushed garlic. 
  2. Add your chosen veg and cook until soft.
  3. Season with paprika and mixed herbs.
  4. Add your Quorn Pieces and cook for a further 10 minutes. 
  5. Take off the heat and evenly distribute between 8 tortillas. Roll each tortilla with the filling in and place in an ovenproof dish.
  6. Top with salsa and Eatlean Grated Cheese. Pop in the fridge if you aren’t ready to eat your delicious enchiladas yet.
  7. Place in a preheated oven at 180°C and cook for 10 minutes or until golden brown.
  8. Serve with salad. Enjoy!
