SMASH-Approved Summer Recipe Ideas!

Summer is here - wahooooo we’re excited! Even though the UK weather can often be a little disappointing (to say the least), you can feel all the summer vibes through your recipes. We’re talking BBQs, salads, fruit and every fresh delicious meal in between. 

A summer staple

Got some time to test your skills in the kitchen? The Quorn Fillet Caesar Salad is a super simple meat-free recipe that you can make FROM SCRATCH, which is guaranteed to be yummy. It’s low in saturated fat and packed with protein.  Check it out…


  • Quorn fillets/pieces (pssst… remember to SMASH 50p off)
  • 100g Italian hard cheese (use vegan cheese for a plant-based alternative!)
  • 1 garlic clove
  • Juice of 1 lemon
  • 1 egg yolk
  • 50ml white wine vinegar 
  • 200ml olive oil
  • Little gem lettuce 
  • *Ciabatta bread - Did you know? To increase your fibre intake, you could swap the ciabatta for a wholemeal roll or pittas instead! In the UK, we should be aiming for 30g of fibre per day.


  1. Blend together the cheese, lemon juice, egg, garlic and white wine vinegar. 
  2. Slowly add the olive oil until smooth and season.
  3. Fry the Quorn over a medium heat for approx. 10-15minutes, stirring continuously until piping hot throughout.
  4. Slice the bread  into quarter-inch slices, place on a baking tray, lightly drizzle with olive oil and grill until golden brown.
  5. Toss the lettuce with the dressing and Quorn. Garnish with ciabatta croutons and cheese.

Gosh… just writing that recipe has got our mouths watering. We know what we’re having for dinner tonight.

Time for a BBQ

Suns out? BBQs out. We’ll leave the meat to you because we have some ideas for sides that will get your taste buds tingling.
